Veggie loaded curry with homemade herby flatbread
400ml can light coconut milk
3 tbsp curry paste
2 tsp vegetable bouillon powder
1 lemongrass stick
1 red chilli, deseeded and sliced
1 tbsp finely chopped ginger or grated
3 garlic cloves, sliced and minced
2 carrots, washed and peeled, cut into chunks
